It’s finally pumpkin season! My favorite time of the year! There are so many things to celebrate over this wonderful autumn squash. Not only is it a tasty addition to a variety of dishes but pumpkin packs a nutritional punch. 1 cup of pumpkin contains 3 grams of fiber, 200% of your daily value of vitamin A, and is only 50 calories. Pumpkin is rich in vitamin C, potassium and the anti-oxidant beta-carotene, which is also responsible for its bright orange color. The seeds are also a great source of fiber and heart healthy monounsaturated fats.

If you’ve only eaten pumpkin in pie form before, try some of these other unique ways to enjoy pumpkin this fall:

  • Add to oatmeal with cinnamon or pumpkin pie spice
  • Add to a smoothie or protein shake
  • Mix into greek yogurt
  • Stir into sauce, soup, curry or chili for a vitamin and fiber boost
  • Add to meatloaf, meatballs, or burgers
  • Mix with peanut butter, cinnamon and a touch of honey for a sweet fruit dip
  • Use it in a savory dip or hummus
  • Mix into your favorite macaroni and cheese recipe
  • Add to pancake and waffle batters
  • Make a homemade pumpkin spice latte or pumpkin chai tea latte
  • Roast the pumpkin seeds for a snack, to mix with trail mix, or add to yogurt
